Thermal-Chemical Conversion (TCC) of starch has been available in various forms since the 1950’s. It has been developed into a commercial process utilized in a significant portion of industrial starch applications today. To utilize the process effectively requires a good understanding of the process and the characteristics of the resultant products. Discussed are: 1. The basic TCC process. 2. Some characteristics of the products 3. Recommendations for control and application of thermal-chemically converted starch paste.
